Meet us: Mandy's Ibiza

Next year will be a very special year for us and our longest-standing guests as we will be celebrating Hotel Ánfora’s 50 years of history in 2019. In honour of such a special anniversary, we’re opening a new blog section devoted to the people who make the guests’ stay at our modern 4-star hotel in Es Canar as pleasant and comfortable as possible. We will learn about their favourite spots in Ibiza, their advice and their relationship with Hotel Ánfora. Today we’re talking to Mandy, a Scotswoman who’s been living in Ibiza for 18 years. She will always greet you with an easy smile and a cocktail shaker in hand to make the most refreshing cocktails.

- What’s a Scot doing in Ibiza?

Years ago I met my Ibiza-born partner in London and after living there for some time, we decided to come and live on the island in search of a quieter place. And that was 18 years ago!

- How many years have you been working at Hotel Ánfora?

This has been my 16th season at Hotel Ánfora. So many summers and so many memories...

- What’s the funniest anecdote you’ve lived at Hotel Ánfora?

I can remember the 2010 World Cup, when Spain won. That summer, most guests were British but they all painted their faces with red and yellow stripes and cheered the Spanish team. It was so funny. To celebrate the Spanish victory, we had a party in the swimming pool and we all had a great time.

- And the most emotional one?

I always get emotional when one of our regular guests comes back after several years away, sometimes because they’d been ill. Those moments are heart-warming.

- What’s your favourite spot in Ibiza?

I love the area between Es Cubells and Cala Tarida. Also Portinatx. It’s the one I usually enjoy in the winter, when the hotel is closed.

- What would you say is a must-see for a first-time visitor in Ibiza?

On your first trip to Ibiza, you must take a stroll through the old part of Dalt Vila and climb up to Ibiza’s cathedral. The views are stunning!

Mandy’s suggestions for Ibiza

- What do you like most of your job at Ánfora Hotel Ibiza?

I’ve always been behind the bar and I love it because you can talk to the customers and learn a lot from them and their jobs. I love meeting interesting people.

- Have you ever been asked for a really surprising cocktail?

I have been asked for weird cocktails, like Amaretto with coca-cola... But if that’s what the customer wants, I’ll mix it...

- What’s your favourite cocktail?

Strawberry daiquiri, piña colada and Sex on the beach.

- Do you prefer Ibiza in the winter or in the summer?

I prefer the winter, because the island is quieter.

- What’s your favourite beach?

Ses Salines.

- What’s your favourite Ibizan dish?

I like the sofrit pagès (a very tasty meat dish) and the flaó with its unique taste of cheese with mint.
